The Best Way to Start Your Day

I think the best mornings start in the kitchen. The smell of toasting bread fills the air. Then you add creamy avocado and a perfect poached egg. It feels like a hug on a plate. This is my favorite easy breakfast recipe. It turns simple things into something special.

Why does this matter? Taking a few minutes to make a real meal sets a happy tone. It’s better than eating a bar from a box. I still laugh at my first try at poaching an egg. It looked more like a cloud than an egg! Do you have a breakfast that always makes you smile?

The Magic is in the Sprinkle

The star of this dish is the homemade everything bagel seasoning. You just toast some seeds in a pan. Doesn’t that smell amazing? It wakes up the whole kitchen. Mixing it yourself means it’s fresh and full of flavor.

Fun fact: Toasting the seeds makes their flavor pop! It only takes a minute. This little jar of magic is why this avocado toast recipe stands out. You can put it on salads, eggs, or even popcorn. What would you sprinkle it on first?

Secrets for the Perfect Bite

Let’s talk about the smashed avocado. Use a ripe avocado. It should feel slightly soft. Add a good squeeze of lime juice right away. This keeps it green and adds a nice zing.

Now, for the poached egg. The vinegar in the water helps the egg white stay together. Don’t let the water boil hard. A gentle simmer is perfect. A runny yolk is like a sauce for your toast. Do you prefer your yolks runny or set?

More Than Just Breakfast

This toast is my go-to for brunch ideas with friends. It looks fancy but is so simple. It’s also a perfect quick lunch recipe when you need something good and fast.

Why does this matter? Good food doesn’t need to be complicated. It’s about mixing textures and tastes you love. The crunch of the seasoning, the creaminess of the avocado and egg. It all works together. Avocado toast with egg is a classic for a reason.

Your Turn in the Kitchen

The best part is putting it all together. Toast your bread until it’s golden. Spread on that green, creamy avocado. Gently place your warm egg on top. Then, shower it with that special everything bagel seasoning.

Fun fact: The seasoning gets its name from the “everything bagel,” which has all the toppings! Making your own means you always have it ready. I promise, once you learn how to poach an egg, you’ll want to put it on everything. What’s the first meal you’ll make with your new skills?

Instructions

Step 1: First, make your homemade everything bagel seasoning. Toast the sesame and poppy seeds in a dry pan. They smell so nutty! Let them cool in a bowl. Then mix in the garlic and onion granules with a pinch of salt. This easy breakfast recipe gets magic from this sprinkle.

My Best Tips for Storing This Toast

Let’s talk about storing this avocado toast recipe. You cannot store the assembled toast. The avocado will turn brown. The bread will get soggy. But you can prep parts ahead. This makes your morning so much easier.

Make the homemade everything bagel seasoning in a big batch. Store it in a little jar. It keeps for months. I remember my first batch. I felt so clever having my own spice mix ready. It saves money and tastes fresher.

You can also mash the avocado ahead. Press plastic wrap right on the surface. This keeps the air out. Add a squeeze of extra lime juice. It will stay green in the fridge for a day. Batch cooking these parts builds a peaceful kitchen. You deserve a calm, quick lunch recipe without the fuss.

Simple Fixes for Common Kitchen Hiccups

We all face little problems in the kitchen. Here are three easy fixes. First, your avocado is never ripe when you need it. I once planned brunch ideas and faced rock-hard avocados. Place them in a paper bag with a banana. They will ripen in a day or two.

Second, your poached egg turns into wispy clouds. The water is boiling too hard. Keep it at a gentle simmer. The vinegar helps the whites hold together. Third, your toast gets cold before everything is ready. Time it right. Start toasting the bread just as the eggs go into the water.

Solving these small issues builds your confidence. You learn that cooking is flexible. It also makes the flavors perfect. A ripe smashed avocado and a runny yolk are worth the effort. Which of these problems have you run into before?

Description

Everything Bagel Avocado Toast

Ingredients

    Everything Bagel Seasoning:

    Smashed Avocado:

    Poached Eggs:

    To Serve:

    Instructions

    1. Everything Bagel Seasoning: Add the sesame & poppy seeds into small frying pan then cook over a medium heat until lightly toasted. This will only take a minute or two. Add the toasted seeds into a small mixing bowl, leave to cool then stir in the garlic granules, onion granules & sea salt. Set this aside for now.
    2. Smashed Avocado: Halve the avocado, remove the stone then score & scoop out the flesh. Place this into a mixing bowl with the lime juice then season with sea salt & freshly cracked black pepper. Give the avocado a good mash with a fork (or whisk) then give it a taste to check the seasoning. Add in more salt & pepper as needed.
    3. Poached Eggs: Fill a medium saucepan up with water, add in a generous splash of white wine vinegar then set over a medium heat & bring to a gentle simmer. Crack an egg into a small bowl/ramekin then gently add into the simmering water. Repeat with the other egg then poach for 2-3 minutes, until the whites have set but the yolks are still runny. Once cooked lift the eggs out of the water using a slotted spoon, letting them drain briefly before serving. It’s best to poach your eggs just before plating up.
    4. To Serve: Whilst your eggs are poaching, toast the bread then place onto plates. Spread half of the smashed avocado over each slice of toast then top with a poached egg. Sprinkle everything bagel seasoning over each portion of avo toast then serve!

    Notes

For a different twist, try the seasoning on scrambled eggs or use fried eggs instead of poached.
