My Favorite Strawberry Shortcake Cake

This is my best strawberry cake. It is not fussy. It is a simple vanilla cake recipe. It soaks up all the sweet strawberry juices. I think that makes it the perfect summer dessert.

I love a homemade strawberry shortcake. But sometimes, I want a layer cake with strawberries. This is that cake. It feels special. It tastes like sunshine. Do you have a favorite summer memory tied to a dessert? I’d love to hear it.

The Secret is in the Whipped Cream

Let’s talk frosting. This is a stabilized whipped cream frosting. That just means it won’t go flat. The cream cheese makes it sturdy and a little tangy. It is the best partner for sweet berries.

You must keep everything cold. I even chill my bowl sometimes. *Fun fact: Cream whips best when it’s very cold. The fat molecules get happy and hold air.* This cream cheese frosting is a dream. It makes this an easy strawberry cake to put together.

A Little Story About Strawberries

My grandson once ate all the berries I had set aside for the filling. I still laugh at that. His face was covered in red juice. I had to quickly slice more. It taught me a good lesson.

Always buy extra strawberries. This matters because fresh fruit is the star here. The cake is just a soft, sweet pillow for it. If you love berries, you must try this strawberry cream cheese pound cake too. It’s another family favorite.

Why This Cake is So Special

This is a make ahead dessert. You can bake the layers a day early. You can even frost it a few hours before guests come. This matters to me. It means less stress and more fun.

The mix of vanilla and a hint of almond is magic. Doesn’t that smell amazing? It makes the whole kitchen feel warm. For another treat with that cozy feeling, my Amish strawberry pie is just as simple and good.

Bringing It All Together

Building the cake is the fun part. Layer of cake, then frosting, then berries. Repeat. The jam mixed with the berries makes a glossy, sweet filling. It seeps into the cake just right.

This strawberry shortcake cake is always a hit. It looks beautiful but is not hard. What is your go-to dessert for sharing with friends? For more summer dessert recipes, this strawberry pretzel salad is a fun, sweet-and-salty choice. Or, for something lighter, a fluffy strawberry fruit dip is perfect with fresh fruit.

Instructions

Step 1: First, make your vanilla cake recipe. Whisk your dry ingredients in a bowl. In another bowl, beat sugar, oil, eggs, and extracts. This is the heart of your homemade strawberry shortcake cake. Add sour cream, then flour and milk, mixing gently. (Tip: Don’t overmix the batter for a tender crumb!)

Step 2: Divide the batter into three pans. Gently tap them on the counter. This pops air bubbles for an even bake. Bake until a toothpick comes out clean. Let the cakes cool completely. This easy strawberry cake is the perfect base for our summer dessert recipes.

Keeping Your Cake Fresh and Fabulous

Let’s talk about storing this lovely strawberry shortcake cake. The fridge is your best friend here. Cover it well and it will last up to three days. The freezer works for the cake layers alone. Wrap them tightly for a month. This makes it a perfect make ahead dessert.

I remember my first layer cake. I left it out overnight. The next day, the frosting was a sad, soupy mess. I learned a cold lesson. Now I always chill it. Storing it right means every slice is as good as the first. It shows care for your hard work and your guests.

Simple Fixes for Common Cake Troubles

Even grandmas have kitchen hiccups. First, a dry cake. Do not overmix your vanilla cake recipe. Mix just until the flour disappears. Second, runny frosting. Your cream must be ice cold for that stabilized whipped cream frosting. I once used warm cream. It never thickened. Third, soggy layers. Let your berries drain a bit after mixing with jam.

Fixing these small things builds big confidence. You will feel like a real baker. It also makes the flavors perfect. A tender cake and fluffy frosting make the best bite. Which of these problems have you run into before?

Description

A classic, tender layer cake filled and topped with fresh strawberries and a light, fluffy whipped cream cheese frosting.

Ingredients

    Cake:

    Filling:

    Frosting:

    Instructions

    1. Preheat oven to 350°F. In a medium bowl, whisk flour, baking powder, and salt until combined. Set aside.
    2. Using a stand mixer fitted with the paddle attachment (preferred) or a hand mixer, beat sugar, oil, eggs, egg whites, and extracts until combined. Add the sour cream and beat until combined. Add half of the flour mixture, beating until just combined. While still beating, slowly add milk, then the remaining flour mixture. Scrape the sides and bottom of the bowl as needed. Be careful not to overmix it.
    3. Line three 8-inch cake pans with parchment paper and grease the pans. Evenly divide the batter between the three pans. Tap/gently drop the pans on the countertop a couple times to remove any air bubbles.
    4. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean. If necessary, rotate the pans once during bake time to ensure even browning. Place the pans on a rack to cool completely.
    5. Combine the strawberries and jam and set aside (these will be used for the filling and topping). Note: I slice the strawberries for the filling (about 2½ cups), and I diced the strawberries for the top of the cake (about ½ cup). You can slice or dice, your choice. You’ll need about 3 cups total.
    6. Place the cream cheese, powdered sugar, and vanilla extract in a large mixing bowl. Using a stand mixer with a whisk attachment (preferred) or hand mixer, beat the mixture on medium speed until smooth. While the mixer is still whipping, slowly pour the heavy cream down the side of the bowl. Stop and scrape the bottom and sides of the bowl periodically. Increase the speed to high and continue whipping until the cream can hold a stiff peak. It is important that the cream stays cold so that it will thicken properly. If you’re using a hand mixer hold the bowl near the top and don’t hold the bowl against your body.
    7. Place one layer of cake on a platter. Top with one-third of the frosting, then top with about 1¼ cups of strawberries. Place another layer of cake on top and repeat. For the third/top of layer of cake, top with remaining whipped cream frosting, then place the remaining strawberries in the center. Decorate the outside with whole strawberries, if desired.

    Notes

Ensure all dairy ingredients (sour cream, milk, cream cheese, heavy cream) are at the specified temperatures for best results. The cake layers must be completely cool before frosting.
